Try This Crispy Chicken With Creamy Burrata and Marinated Tomatoes
This simple burrata chicken Milanese recipe is a great way to make a quick and delicious dinner. The dish has a thin and crispy texture and is served with shaved Parmesan and a squeeze of lemon juice. It’s perfect for preparing something interesting for the entire family or a guest night. Here’s how to prepare it.
The Needed Ingredients
For the Chicken:
- 9oz of chicken breast
- 1/2 tsp of Italian seasoning
- 1 tsp of salt
- 1/2 tsp of onion powder
- 1/2 tsp of garlic powder
- 1/2 tsp of black pepper
- 1/4 cup of flour
- 2 eggs
- 1 cup of panko breadcrumbs
- 1/2 cup of olive oil
For the Salad:
- 2 tbsp of extra virgin olive oil
- 1 tbsp of balsamic vinegar
- 1/2 tsp of honey
- 5oz of baby plum tomatoes
- 2oz of arugula
Additional:
- 2 lemon wedges
- A pinch of flaky sea salt
- 5oz of burrata
- Shaved parmesan
How to Make It
1. You will need a medium mixing bowl to mix some extra virgin olive oil with balsamic vinegar and honey plus a pinch of salt and pepper. Cut the tomatoes in half and toss them in the dressing to marinate.
2. In a separate small pot or bowl, mix the Italian seasoning with the salt, pepper, onion, and garlic powder.
3. You should get three dishes and fill one with flour and half of the seasoning mix, one with the beaten eggs, and one with the panko and the other half of the seasoning. Also, get a tray ready to rest the breaded chicken on it.
4. Now slice the chicken horizontally into two even pieces and put cling film on top of it. Get a mallet to pound the breasts to even thickness and ensure they are fairly thin but not too much so, or they can break apart.
5. Dredge each chicken piece in the flour, egg, and panko bowls in that order, and let them sit on the tray. It’s important to coat the chicken thoroughly.
6. To fry the chicken, fill the base of a large pan with oil and place it over medium heat unit it gets hot. This should happen in five minutes, at which point you can put the chicken in to fry each side for about three minutes until it gets golden and crisp. The center of the chicken should get very hot, so how long you let it sit in the pan depends on how thin the pieces are.
7. To serve, add some lemon juice, a pinch of salt, half a burrata, a spoonful of tomato salad, and some arugula and shaved parmesan.
