The Gruyère Mushroom Pizza Recipe

Necessary Ingredients

  • 2 balls of pizza dough, store-bought or homemade
  • 4 ounces Gruyère cheese, shredded
  • 8 ounces low-moisture mozzarella cheese, shredded
  • 12 ounces assorted mushrooms, cleaned and thinly sliced or torn into bite-sized pieces
  • 1 cup heavy cream
  • ½ cup loosely packed flat-leaf parsley, finely chopped
  • 4 tablespoons extra-virgin olive oil, divided
  • 2 tablespoons balsamic glaze for drizzling, plus more if needed
  • 1 clove garlic, peeled
  • Freshly ground black pepper
  • Kosher salt

Store-Bought Dough Makes Things Easier

Store-bought pizza dough is perfect for weeknight meals, especially when you’re low on time and want to simplify the recipe. If you can’t find pizza dough specifically, don’t worry, any store-bought dough will do because this skillet pizza method is super forgiving — you’ll be doing all the proofing and stretching right in the pan.

How to Make the Pizza

Start by preheating the oven to 450°F (place the rack in the bottom third). Then, grab two 10-inch cast iron skillets and add one tablespoon of oil to each. Place each pizza dough ball into a skillet and toss them well to get the oil on all sides. Stretch the dough by gently tugging it toward the sides of the skillet, so it fully covers the base.

Let the dough proof for about 45 minutes to an hour. In the meantime, roast the mushrooms by tossing them with black pepper, kosher salt, and olive oil. Bake them for 15-20 minutes, stirring halfway. Mix half the chopped parsley with the mushrooms and let them cool.

Meanwhile, make the white sauce by bringing the cream to a simmer in a small skillet. Stir in a pinch of salt, black pepper, and the garlic clove. Let it simmer for about ten minutes, then remove it from the heat and let it cool completely.
