How to Make the Greek Yogurt Pancakes

Step 1

Grab a large bowl and whisk together the eggs, milk, Greek yogurt, vanilla, and maple syrup until you get a smooth batter.

Step 2

In a separate bowl, combine the dry ingredients: baking soda, flour, baking powder, and salt.

Step 3

Add the dry ingredients mix to the yogurt batter and mix them well. The batter should be thick, so add a little flour if it’s too runny.

Step 4

Put a large nonstick skillet on medium heat. You’ll know it’s pancake time when splashes of water evaporate immediately after reaching the skillet.

Step 5

Spoon in some batter to make three or four pancakes (each pancake should be about two tablespoons) to cook simultaneously. You’ll know they are ready to flip when there are bubbles around the edges and in the center. Use a spatula and flip them carefully (if they aren’t golden brown, flip them back). After one more minute, your first batch of pancakes will be ready. Continue cooking until you’ve done the entire batter.
