Easiest and Most Delicious Way to Whip Up a Salmon Pasta Salad
There is a very easy way to prepare delicious smoked salmon pasta salad that everyone will like. It involves making a nice dressing and preparing pasta salad with some bagel, onions, cucumbers, and capers. Though this is often referred to as a side dish by many, it can actually be prepared as a quick dinner.
Ingredients You’ll Need
For the dressing:
- 1/2 cup of full-fat mayo
- 1/2 cup of sour cream
- 1 1/2 tablespoons of lemon juice
- 1 heaped tablespoon of finely diced fresh chives
- 1 heaped tablespoon of finely diced fresh dill
- 2 tablespoons of Dijon mustard
- 1/2 tablespoon of sugar
- 1/2 tablespoon of black pepper
- 1/8 1/2 salt
For the pasta salad:
- 1 bagel
- 1 1/2 cups or 10.5oz of uncooked orzo
- 7oz of smoked salmon
- 5.3oz of cucumber
- 2 1/2 tablespoons of capers
- 1/2 small and finely diced red onion
- olive oil
How to Make It
1. Start by preheating the oven to 350°F. Put the bagel chips in a baking tray where you should drizzle with some oil.
2. Add a pinch of salt for good measure and bake the bagel for about 10 minutes until golden and crisp. Let them cool completely.
3. Put the orzo in salted boiling water where you should cook it until it is firm to the bite, or as the Italians like to say, al dente.
4. When that is ready, drain and rinse the orzo with cold water and ensure it also cools completely. You can remove some of the water by shaking the orzo.
5. Use the time while your pasta is cooking to combine the dressing ingredients in one bowl. When everything is ready, combine your cooled orzo with cucumbers, capers, and onions and add the dressing.
6. Add the croutons and salmon and stir them in until you feel everything has been distributed evenly. Your smoked salmon pasta salad is now ready!
