Try This Delicious Toast With Sautéed Dandelion Greens Recipe

Gather These Ingredients

To make up to four servings of this scrumptious dandelion toast recipe, you’ll need:

  • Around eight ounces or a bunch of dandelion greens with a portion of the stems discarded
  • A thinly sliced small red onion
  • Two tablespoons of olive oil
  • A pinch of red pepper flakes
  • A teaspoon of grated lemon zest
  • Two tablespoons of lemon juice
  • Four ounces of feta cheese
  • A loaf of ciabatta bread
  • A quarter of a cup of plain yogurt
  • Salt and pepper
  • Mint leaves for garnish

Sautée the Greens

Start by warming up the oil in a large skillet on medium heat. Add the red pepper flakes and the onion. Sauté for six minutes until they’re just tender. Add the lemon juice and cook for around 30 seconds until it evaporates. Remove the skillet from heat and add the dandelion. Season with a quarter of a teaspoon each of salt and black pepper. Toss the dandelion until it starts to wilt.

To make the spread, crumble the feta cheese into a small food processor and pulse four times. Keep the food processor running and add the lemon zest and yogurt. Puree until you get a smooth consistency. Split the ciabatta in half and toast each side. Spread the cheesy mixture on the bread, top with sautéed dandelions, and sprinkle mint on top.
